Delicious and Clean Salmon Tacos



Seriously, Dinner the other night was ONE that I HAVE to share!! I have an amazing friend who put this all together for me and It was one of the most delcious meals I have ever had. You will want to try this for sure. My husband and kids cleaned there plate. I am drooling thinking about it right now.

Ingredients : 

Salmon Filets 
Lemon Juice 
Minced Garlic
Corn Tortillas 
Siracha 
Organic Quinoa and Kale Mix from Costco


Directions: 

Cook skin on salmon fillets in lemon juice and garlic with skin side down on medium heat... No oil needed! Crushed black pepper optional


Wait to flip until fish is almost thoroughly cooked, (the skin may be burned, but don't worry!) then peel skin off  your fish should be perfect




Brown small corn tortillas in pan (again with no oil) the remaining lemon and garlic give them a nice color.


Combine ingredients and top with fresh lemon, and sriracha hot sauce if you like it spicy!!

Serve and Enjoy. 

If you are on the Fix I counted this as 2 Yellows and 1 Red. 
If you want to omit one tortilla and some of the quinoa you can scale it down to 1 yellow.

Clean Eating Lasagna Soup

Last night we had this amazing dinner above. Best part about it, it tasted like a cheat but was actually CLEAN. Now this isn't the kind of meal I would eat every single night but it's good to have once a week and the family loved it. My husband is chopping on the leftovers and bragging about how good that soup is. I call it a WINNER!! 


Ingredients: 

8 ounces broken whole wheat lasagna noodles {{about 10 noodles}} 
1 Tbsp of Extra Virgin Olive Oil 
1 Onion Chopped 
1/2 pound of turkey hot or sweet Italian Sausage 
3 cloves of garlic 
1 tsp dried oregano 
2 Tbsp of tomato paste {{no sugar added, organic preferred}} 
4 cups of low sodium chicken broth 
1 15 ounce can of crushed tomatoes 
1/2 cup chopped fresh basil 
1/3 cup grated parmesan cheese
1/4 cup almond milk/coconut milk
Ricotta cheese for topping

Directions: 

Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain; drizzle with olive oil and toss.
Meanwhile, heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion and cook, stirring, until softened, about 4 minutes. Add the sausage, garlic and oregano and cook, stirring and breaking up the sausage with a wooden spoon, until the sausage is browned, about 3 minutes. Add the tomato paste and cook, stirring, until darkened, about 2 minutes.
Add the chicken broth, tomatoes and 1 cup water; cover and bring to a simmer. Uncover and cook until slightly reduced, about 10 minutes. Stir in the noodles, basil, parmesan and almond or coconut milk; simmer 2 more minutes.
Divide the soup among bowls. Top with ricotta and sliced basil.




Next time - I will leave the noodles out and add them in as I eat. I noticed that they got soggy as they sat in the fridge as leftovers.

Clean Eating Monday - Week worth of Clean Eating Dinner Recipes !!


So, I haven't done this in awhile but these clean eating dinner menu's are one of the most popular posts on my blog so I wanted to bring in this monday with a week full of clean eating dinners that you can use. Make big batches to have for lunches and be set up for the entire week. It's so important to eat 5-6 small meals a day so that you can keep your metabolism running and a FAT burning machine!!! I also like to follow the clean eating diet so most of my meals eliminate a lot of processed extras.

So here is a weeks worth of clean dinners Monday-Friday. I normally have ONE cheat meal a week or "happy" meal as I like to call it. Where I eat what I want. ONLY ONE MEAL though!! I enjoy it and then move on!! I don't crazy bingeing either. I simply just have a meal, glass of wine, dessert. Something along those lines.

Monday - Spaghetti Squash and Turkey Meat Sauce I normally pair this with a spinach salad!! Spaghetti always tastes good with a good garden salad to pair it with. 

Tuesday- Clean Tomato Soup This is good ALLL on it's own!! SERIOUSLY! Amazing! 

Wednesday - Thai Chicken Meatballs This is one of my favorite meals and it totally feels like you are charting so watch your portion control here. 

Thursday - Creamy Taco Soup THE BEST!!! Try it NOW! 

Friday - Pita Pizzas Simple yet so delicious Top as many veggies as you want on this baby. I love adding feta instead of reg cheese along with mushrooms and spinach.

Clean Mexican Lasagna






So I had this meal on the menu this week because I was trying to mix things up a bit so that I don't get board and this was totally AMAZING!! It's a must try and a great clean meal the family will enjoy. My hubby went for seconds. I always know if he likes something or not but the amount of times he gets up to get more. If he only goes up one time I know it's not a favorite of his. HA. Can any other Wife relate? This is a winner! Totally hit the spot and I know you will love it too. It's good to mix things up and get creative so you don't resort back to the junk. This felt like a cheat. 




Ingredients:
  • 1lb lean ground turkey
  • 1 cup of shredded cheddar cheese (low fat)
  • 1 cup of cottage cheese
  • 1 cup of clean salsa
  • 1/2 cup of black beans
  • 1 small onion, chopped
  • 1 tbsp taco seasoning
  • 4 low carb whole wheat tortillas, cut into strips (I like the santa fe wraps from costco)
  1. Preheat over to 400 degrees.
  2. In a skillet pan sprayed with nonstick spray, cook the ground turkey and onion until brown.  Once cooked turn to low and add salsa, black beans and taco seasoning and mix together.  Set aside
  3. In a bowl, combine 3/4 cup of the cheddar cheese and the cup of cottage cheese.
  4. In a baking dish sprayed with nonstick spray, line the pan with 1/2 of the tortilla strips.  Scoop 1/2 of the meat mixture on top and spread out, covering the tortillas.  Then add 1/2 of the cheese mix on top of the meat and spread.  Repeat the layers again with remaining strips, meat, and cottage cheese.  Top with remaining cheese.
  5. Cover and bake for 40 minutes and enjoy!  Makes 4 servings at 350 calories each.

Chicken Tortilla Soup

Today's lunch was left over tortilla soup and it was amazing! It always taste better the next day. YUMMMM!!! 
This recipe is PERFECT for this time of year. Clean, healthy, and makes tons of left overs. 





Clean Chicken Tortilla Soup

Ingredients
2 whole Boneless, Skinless Chicken Breasts
1 Tablespoon Olive Oil
1-1/2 teaspoon Cumin
1 teaspoon Chili Powder
1/2 teaspoon Garlic Powder
1 Tablespoon Olive Oil
1 cup Diced Onion
1/4 cup Diced Green Bell Pepper
1/4 cup Red Bell Pepper
3 cloves Garlic, Minced
1 can (10 Oz. Can) Rotel Tomatoes And Green Chilies
32 ounces, fluid Low Sodium Chicken Stock
3 Tablespoons Tomato Paste
4 cups Hot Water
1 can (15 Oz. Can) Black Beans, Drained
1 can Pinto Beans
5 whole Corn Tortillas, Cut Into Uniform Strips Around 2 To 3 Inches

FOR THE GARNISHES:
Greek Yogurt
Diced Avocado
Diced Red Onion
Salsa Or Pico De Gallo
Grated Monterey Jack Cheese
Cilantro


Preparation Instructions
Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.
Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside.
Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.
Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to undersalt. Turn off heat and allow to sit for 15 to 20 minutes before serving. Five minutes before serving, gently stir in tortilla strips.
Ladle into bowls, then top with sour cream, diced red onion, diced avocado, pico de gallo, and grated cheese, if you have it! (The garnishes really make the soup delicious.)

Black Bean, Sweet Potato, Quinoa Chili


I was in the mood for chili but something different then our normal taco chili recipe and this TOTALLY was worth the extra chopping. So delicious and it made a ton. It's getting into those cold months and our rainy season here in Hawaii. This recipe will for sure be made again.

Black Bean, Sweet Potato, & Quinoa Chili 

Ingredients
1 teaspoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced small
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
pinch of nutmeg
1 teaspoon cumin
2 teaspoons chili powder
1 teaspoon Smoked Chipotle Tabasco sauce
salt, to taste
1 can (15.5 oz) low-sodium tomato sauce
2 cups cooked quinoa
2 can black beans (15.5 oz), drained
4 cups low-sodium vegetable stock, plus more to thin if desired
1 large sweet potato, peeled and diced into small cubes

For Chipotle Creme:
1 cup plain greek yogurt
2 teaspoons Smoked Chipotle Tabasco sauce, plus more if desired
1/2 teaspoon honey
1/4 teaspoon dijon mustard

Instructions
Heat the olive oil in a medium pot over medium-high heat. Add the onion, garlic, carrots and salt; saute for 5 minutes or until onions become translucent.
Add the entire can of tomato sauce to the pot. Next add the black beans, vegetarian broth, all spices, and quinoa. Bring to a boil; reduce the heat to medium, add diced sweet potatoes. Cover and simmer for 30 minutes, or until potatoes are tender. Taste and adjust the seasoning if needed.
Make the smoked chipotle yogurt combine tabasco sauce, honey, and dijon mustard in a medium bowl.
Spoon chili into bowls and add yogurt sauce on top. Enjoy!
