Black Bean, Sweet Potato, Quinoa Chili


I was in the mood for chili but something different then our normal taco chili recipe and this TOTALLY was worth the extra chopping. So delicious and it made a ton. It's getting into those cold months and our rainy season here in Hawaii. This recipe will for sure be made again.

Black Bean, Sweet Potato, & Quinoa Chili 

Ingredients
1 teaspoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced small
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
pinch of nutmeg
1 teaspoon cumin
2 teaspoons chili powder
1 teaspoon Smoked Chipotle Tabasco sauce
salt, to taste
1 can (15.5 oz) low-sodium tomato sauce
2 cups cooked quinoa
2 can black beans (15.5 oz), drained
4 cups low-sodium vegetable stock, plus more to thin if desired
1 large sweet potato, peeled and diced into small cubes

For Chipotle Creme:
1 cup plain greek yogurt
2 teaspoons Smoked Chipotle Tabasco sauce, plus more if desired
1/2 teaspoon honey
1/4 teaspoon dijon mustard

Instructions
Heat the olive oil in a medium pot over medium-high heat. Add the onion, garlic, carrots and salt; saute for 5 minutes or until onions become translucent.
Add the entire can of tomato sauce to the pot. Next add the black beans, vegetarian broth, all spices, and quinoa. Bring to a boil; reduce the heat to medium, add diced sweet potatoes. Cover and simmer for 30 minutes, or until potatoes are tender. Taste and adjust the seasoning if needed.
Make the smoked chipotle yogurt combine tabasco sauce, honey, and dijon mustard in a medium bowl.
Spoon chili into bowls and add yogurt sauce on top. Enjoy!

Week full of Clean Dinners



I have normally been doing these meal plans on Monday and I'm SORRY... I need to go back to that! I know sometimes seeing a meal plan made for you helps. I was once in the same spot as many - UNSURE, CONFUSED, and in need of someone to lay a meal plan out for me until I could get the hang of it myself. 

So ... HERE ARE THE RULES - 



All of these dinners are great and your family will love them! I like to plan my meals out every sunday of each week and grocery shop for all that is needed. I will chop, wash, and bag all of my veggies and fruit for the week. Makes cooking easier and I'll even make bigger batches of some dinners so I have a clean lunch for the next day.

Tuesday - Southwestern Stuffed Sweet Potatoes I like to pair this with a big spinach salad or grilled Asparagus. 

Wednesday - Crockpot Chicken with Sweet Potatoes and Carrots I sometimes add a salad with this if i'm extra hungry. 


FridayHoney Mustard Oven "Fried" Chicken This is paired with baked sweet potato chips and Steamed Kale.

Friend Egg and Sweet Potato Hash


This seriously is a meal that I could eat for breakfast, lunch, and dinner! SO amazing!! This is my go to meal from now on!!

So, CONFESSION!! I totally missed the MONDAY MEAL PLAN post!! I'm so sorry!! I had a teething baby girl this week and it's been tough in this house but I'm making it up to you by trying new recipes all week and posting a new recipe the rest of the week. Want to share some new fresh ideas with you to rev up your meal plans.

FOR SURE try this !! Perfect Saturday or Sunday morning brunch.


I took a whole sweet potato and shredded it using a cheese grater. I didn't use the whole potato for myself but if you were feeding your family you could use the whole thing. I grated the whole potato and put the rest in the fridge to use for later. Quick easy and grab ...

I then cut up a zucchini and squash.

I put a little olive oil in the pan. Heated it and then threw in a handful of sweet potato hash.

Sautéed it and then when it was almost done I threw in the zucchini and squash. I seasoned the veggies and potatoes with Mrs Dash's onion herb seasoning. One of my favorites. You can also add in some chili powder to give it a kick.

I then removed the hash and veggies from the pan and fried an egg over medium. I wanted the yolk runny.

Topped the Sweet potato hash with my egg and then added a bit of pepper and feta.

AMAZING! You could even add in an onion or any veggies you like. I also added in mushrooms a few times.

Enjoy this meal! It really is AMAZING!

Black Bean and Quinoa Bowl



I have a LOVE for black beans. Seriously, one of my favorite quick, easy, cheap, and packed with protein go to meal. If you don't have a lot of money to spend on eating clean this meal is totally for you. Throw in some veggies and it's complete. I could really eat this everyday if I needed to.

I hope you enjoy! Seriously a keeper for a quick easy lunch.


1 Can of Black Beans
1/2 chopped onions
1 clove minced garlic
Cumin
Chili Powder
Pepper

1 cup cooked quinoa

Canned Corn.

Toss a little EVOO in a skillet. Once it gets warm toss in your chopped onion and garlic. After about 2-3 mins toss in your black beans, sprinkle of cumin, sprinkle of chili powder, pepper .. let simmer. BAM! I put this in a container and portion out during the week. It lated about 2-3 meals.

Made my batch of Quinoa and tossed it in the fridge. When it came time to eat I just tossed some blackbeans on a plate, some quinoa, and some corn that was already in the fridge. Micorwave and BAM! Perfect meal.
