Whole Wheat Grilled Veggie Wrap

This wrap is AMAZING! One of my favorite quick dinners or lunches. You could even make up the ingredients for the week -- To have a little less calories and carbs you could omit the tortilla and have a black bean and grilled veggie bowl all week for lunches. I know you will enjoy this as much as I do. YUM! 


Mashed Avocado 
Light Cheese 
Cooked Brown Rice or Quinoa 
Shredded Lettuce 
Chopped Onions & Bell Peppers 

Put a small tsp of extra virgin olive oil in a pan - heat and then place chopped onions and bell peppers in the pan. 

While that is sautéing for a few minutes heat your tortilla in the microwave for a bout 10 seconds 
Spread your mashed avocado and salsa. Then pour in some brown rice, black beans, and corn 

Once your veggies are done place them on your tortilla and sprinkle on the cheese and lettuce. 

Roll the Wrap up and Enjoy. 

I really don't know the measurements. I definitely used portion control and used less rice than black beans and a small amount of cheese. Just eyeball it and don't go crazy. I used the big tortillas and cut it in half and saved the other half for another day.
