Clean Mexican Lasagna






So I had this meal on the menu this week because I was trying to mix things up a bit so that I don't get board and this was totally AMAZING!! It's a must try and a great clean meal the family will enjoy. My hubby went for seconds. I always know if he likes something or not but the amount of times he gets up to get more. If he only goes up one time I know it's not a favorite of his. HA. Can any other Wife relate? This is a winner! Totally hit the spot and I know you will love it too. It's good to mix things up and get creative so you don't resort back to the junk. This felt like a cheat. 




Ingredients:
  • 1lb lean ground turkey
  • 1 cup of shredded cheddar cheese (low fat)
  • 1 cup of cottage cheese
  • 1 cup of clean salsa
  • 1/2 cup of black beans
  • 1 small onion, chopped
  • 1 tbsp taco seasoning
  • 4 low carb whole wheat tortillas, cut into strips (I like the santa fe wraps from costco)
  1. Preheat over to 400 degrees.
  2. In a skillet pan sprayed with nonstick spray, cook the ground turkey and onion until brown.  Once cooked turn to low and add salsa, black beans and taco seasoning and mix together.  Set aside
  3. In a bowl, combine 3/4 cup of the cheddar cheese and the cup of cottage cheese.
  4. In a baking dish sprayed with nonstick spray, line the pan with 1/2 of the tortilla strips.  Scoop 1/2 of the meat mixture on top and spread out, covering the tortillas.  Then add 1/2 of the cheese mix on top of the meat and spread.  Repeat the layers again with remaining strips, meat, and cottage cheese.  Top with remaining cheese.
  5. Cover and bake for 40 minutes and enjoy!  Makes 4 servings at 350 calories each.

T25 / Les Mills Body Pump Hybrid Schedule and Meal Plan






So my half marathon has been over for awhile and I have found myself struggling to get back into a routine and finding exactly what programs I wanted to start and where I want to go with my fitness schedule. I've decided that I want to have the weights of Body Pump but I want the mix the amazing T25 Cardio. Fast but effective!! I did half of T25 before I started my Half Marathon Training but I wasn't able to finish since I had to focus on my running. So this week I decided to start my Hybrid Schedule and so far I'm on day 4 and I'm SORE!!!

Monday - T25 Cardio
Tuesday - Pump Challenge
Wednesday - Total Body Circuit
Thursday - Pump & Burn
Friday - Lower Focus & Cardio
Saturday - Pump & Shred
Sunday - Rest/Stretch

I found this Advanced and Beginner Hybrid Schedule and I'm following the Advanced one unless it gets too hard! :)

I'll share them with you. IF you decide to take the two programs and do the hybrid I believe these guides are good to follow.



                                


Les Mills Pump seriously gives amazing muscles and results. I'm looking for a transformation in my booty area, hips, and arms! I wouldn't mind some toning in the tummy too. I'm planning on really focusing on my diet and getting great results. I'm thankful that I have a huge Holiday Meltdown Challenge group with over 40 ladies that I'm running to keep me accountable during these tough holiday months. 
I also have watched my Challengers get AMAZING results with T25 so I'm excited to finally finish it!! 
This is what they had to say when I ran my T25 Test Group. The results were AMAZING!! I'm so impressed by this brand new program. I think it's amazing how much you can get done in 25 minutes / 5 days a week. 




I have my meal plan ready to go, meals prepped and it's been a great week so far!! The thing that most people don't know is that nutrition is 80% of your results. If you don't have the proper nutrition and fuel   while doing these programs you won't get the results you desire. It's important to eat 5-6 small meals a day to keep your metabolism running. 

I look forward to updating you on my progress over the next few months. I also am excited to share my challengers results. We have an amazing group going and many more in the future weeks that are starting and they are ROCKING IT!! 


I'm not a huge calorie counter I focus on Eating Clean and portioning out my food. This way is the way to GO! I use to be a calorie counter! I've tried crash diets, pills, starvation and I promise that eating clean and portioning your food WORKS. I've been doing it the last year and have maintained my happy and healthy lifestyle following these principals. I have lost 35 pounds and have kept it off. 


Some Important things to consider: 
  • A Serving of Lean Protein & Complex Carb at each Meal 
  • DRINK WATER... Lots of it! 
  • Stay away from anything processed and pre packaged food. 
  • Limit your servings of Dairy and good healthy fats like Avocados, Nuts, & Olive Oil 
  • Aim to drink 1/2 your body weight in water so you can stay hydrated and beat the bloat.

I love sharing my meal plans, helping with making good choices, and how to avoid temptations, as well as emotional eating. Week full of Clean Dinners



I have normally been doing these meal plans on Monday and I'm SORRY... I need to go back to that! I know sometimes seeing a meal plan made for you helps. I was once in the same spot as many - UNSURE, CONFUSED, and in need of someone to lay a meal plan out for me until I could get the hang of it myself. 

So ... HERE ARE THE RULES - 



All of these dinners are great and your family will love them! I like to plan my meals out every sunday of each week and grocery shop for all that is needed. I will chop, wash, and bag all of my veggies and fruit for the week. Makes cooking easier and I'll even make bigger batches of some dinners so I have a clean lunch for the next day.

Tuesday - Southwestern Stuffed Sweet Potatoes I like to pair this with a big spinach salad or grilled Asparagus. 

Wednesday - Crockpot Chicken with Sweet Potatoes and Carrots I sometimes add a salad with this if i'm extra hungry. 


FridayHoney Mustard Oven "Fried" Chicken This is paired with baked sweet potato chips and Steamed Kale.

Ashley's Brazil Butt Lift Transformation


Today marks the end of my Brazil Butt Lift Challenge Group and WOW did we get some amazing results. All of these ladies pushed through and are now one step closer to being bikini ready just in time for summer.
Summer bodes are made in the WINTER!!!

This will be a closed Facebook group where you will join other women doing the same program. We all start together and finish together. You will have Ashley and I to support you through this journey. We will help you with meal plans, teach you how to eat clean, share recipes, motivate you, hold you accountable, and help you through the whole program.
