Asian Chicken Lettuce Wraps Recipe

I've been working on adding new recipes into the mix because I get in a routine of eating the same things over and over again. Eating the same things don't bother me but I know for many of you that follow me as well as my customers, they like variety. So I made it my mission to try new recipes and as I found good ones share them. This one is definitely a winner. This is great for dinner with the family, maybe just make a plain batch for the kiddos because it has a small amount of spice in it. You can also meal prep this for the week and take with you for lunches. I didn't add the water chestnuts because I don't care for them. I know you are going to love this just as much as I did. Ingredients: 

1 1/4 pound ground chicken 
1 tbsp of olive oil 
1 clove of garlic minced
1/8 tsp of ground ginger
4 green onions thinly sliced
1 can sliced water chestnuts, drained and coarsely chopped
3 tbsp of hoisin sauce 
2 tbsp of lower sodium sauce 
1 tbsp of rice vinegar 
2tsp of roasted red chili paste
1/8 tsp of salt 
12 Boston lettuce leaves 


Instructions: 

Heat 1 tbsp of olive oil in a large non stick skillet on medium-high heat. Add turkey ground chicken, garlic and ginger. Cook for about 6 mins until chicken is cooked thorough. Stir to crumble. 

Combine chicken mixture, onions, and chopped water chestnuts stirring well and set aside. 

In a small bowl mix together hoisin, soy sauce, rice vinegar, roasted red chili paste, and drizzle over chicken mixture. Toss to coat completely. 

Add 1/4 chicken mixture to the lettuce leave and ENJOY! 

Freaking BOMBLICIOUS and HEALTHY!

Baked Buffalo Chicken

This recipe is AMAZING and one of my favorites. I love meal prepping this for the week to add to wraps, salads, or on top of a sweet potato. I've even added it in my morning omelet topped with some avocado. It's amazing. You have to try this. 

What you need: 
Chicken Breasts I normally make about 4 to use through out the week you can also make this for a family dinner and put it in wraps or in corn tortillas. But the amount of chicken breasts depend on how much you want to make at one time or how many you are feeding. 
1 Bottle of Franks Red Hot Sauce 
Package of Ranch Seasoning 
Baking Sheet 
Foil to line the baking sheet 


Cooking Directions: 

Pre heat your oven to 350 degrees 
Line your baking sheet with foil 
Place chicken breasts on baking sheet 
Coat chicken breasts with Franks Sauce 
Place in the oven for about 15 mins or until the outside of the chicken breasts are no longer pink. 
Take out of the oven, take two forks and shred the chicken (it will still be slightly pink in the middle) 
Mix up shredded chicken in Franks Sauce and add more sauce coating all pieces
Sprinkle some of the Ranch Packet on top of the chicken 
Place back in the oven until completely cooked through about 20 more mins. 
Once completely cooked take out of the oven, let cool, and it's ready. 

You can also buy some greek yogurt, and grab the ranch greek yogurt dip mix to add on top of buffalo chicken tacos. I like to use corn tortillas and heat them with a little olive oil or coconut oil in a frying pan so they crisp up. I then do Lettuce, chicken, avocado, and greek yogurt ranch dip. 

AMAZING! Doesn't even feel like it's healthy!!

Clean Eating Fried Rice Recipe

So this recipe is one of my absolute favorites. I mean I could literally have this meal everyday. I tend to find my best recipes when I take a bunch of stuff in the fridge and just make something with it. So I only had eggs, brown rice, and some frozen veggies so BOOM here came clean fried rice. I'm sure there is some recipe out there for this, but this is just something I threw together. I have had this for lunch the last 3 days. HA HA HA You can totally batch cook and prep this for the week to have for lunches or it's a perfect family dinner option. You can add any veggies you want or protein. Shrimp or Chicken would be perfect to add. 

Serving for One

Ingredients: 
2 Eggs
1/2 cup Frozen Carrots and Peas
1/2 cooked cup brown rice
Light soy sauce or Amino Acids
Olive Oil


Directions:

First take your 2 eggs and scramble them in the frying pan. I like to add some pepper and siratcha for taste. 

Once I am finished scrambling my eggs I take them out of the pan and put to the side. 

I whip the pan out. Pour about 1tbsp of olive oil in the pan.
Once hot I add in my frozen peas and carrots. I add in about 3 tbsp of soy sauce and sauté. 
After a few mints I pour in my cooked brown rice and sauté for another few mins. I add another tbs of sauce sauce. 

Once warm I pour in my eggs mix around, pour on my plate, and top with stratcha. 

If you want to get really fancy like me you can make it into a heart shape like they do at Benihana ha ha ha
