Egg White Muffins

I'm always in search of quick easy snacks and meal ideas!  The fact that you can make these ahead of time, pop them in the fridge and grab and go for the rest of the week just makes perfect sense!  The other bonus is that if you have kids you can easily give these to them on the way to the bus stop or in the car!!  It's a no brainer way to sneak in proper nutrition without anyone having to know!!!
