One Pot Healthy Chicken Fajita Pasta

I found this recipe while scrolling through Facebook on someone's newsfeed that they had shared from another site BUT it was not healthy. I love taking recipes and changing the ingredients to make them clean and healthy. Eating clean is so easy once you get the hang of it. Once you get the basics down you can take any of your favorites and make them healthier, you might not even notice the difference. This was definitely a winner. The only thing that I will do in the future when making this is add more veggies, do less pasta, and add more protein. You could even do this with ground turkey and make a taco pasta. This meal only takes about 30 mins to make and can be a quick easy week day dish your entire family will love. 


Ingredients: 

Serves 3 - 5 

3 Tbsp of Olive Oil 
3 Chicken Breasts, Sliced
1 Red Bell Pepper, Sliced
1 Green Bell Pepper, Sliced
1 Yellow Bell Pepper, Sliced
1 Onion, Sliced
1 Mrs Dash Taco Seasoning Packet OR low sodium Taco Seasoning packet
5 Cups of of Unsweetened Almond Milk
4 Cups of Whole Wheat Penne Pasta
1 Cup of 2% Shredded Cheese


Instructions: 

Heat oil in a large pot over high heat
Add Chicken and cook until no pink is visible, then take the chicken out.
Add the bell peepers and onion, cooking until the onion is translucent.
Add the chicken back to the pot with taco seasoning, stir until evenly coated. 
Add the almond milk and whole wheat penne pasta, stirring constantly to prevent pasta from sticking. 
Cooking for about 8-10 mins until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta. 
Add the cheese and mix until melted. 

Serve!

You are seriously going to LOVE this dish!! Just make sure that you are picking out plenty of chicken pieces and not only getting pasta. You want it protein packed!! You can portion out and pair with a side salad to make filling.
