Parmesan Chicken Burgers

Parmesan chicken burgers, parmesan chicken, healthy food ideas, healthy dinners, clean food that taste good



I have really wanted to add some new recipes to our weekly line up to add some spice to our menu but still keep it healthy and clean. We tried these for the first time after getting the recipe from TASTY after seeing a video they did making them. 
 I used thin sandwich things as our bun. You can easily do this over some Zoodles (zucchini noodles) as a "pasta" dish. 

I used wholewheat bread crumbs and 2% cheese instead of the full fat. 



INGREDIENTS
Breading
½ cup bread crumbs
½ teaspoon salt
¼ cup parmesan

Burger
1 pound ground chicken
½ teaspoon salt
½ teaspoon pepper
½ teaspoon oregano 
½ teaspoon basil
½ teaspoon parsley
2 cloves garlic, minced
¼ cup parmesan
4 slices mozzarella cheese
4 burger buns

Garnish
Marinara sauce
Fresh basil

PREPARATION
1. Stir bread crumbs, salt, and parmesan together in a bowl. 
2. In a large bowl, mix together chicken, salt, pepper, oregano, basil, parsley, minced garlic, and parmesan cheese.
3. Grab a handful of the chicken mixture and pat it out flat in your palm. 
4. Place a slice of mozzarella cheese in the middle and fold the chicken over the edges. Make sure the cheese is fully covered on both sides by the chicken mixture.
5. Cover the patty with the bread crumb mixture on both sides.
6. Cook patty in a pan over medium-high heat for 4 minutes on each side.
7. Plate on a bun with marinara sauce and fresh basil.
8. Enjoy!





Baked Buffalo Chicken

This recipe is AMAZING and one of my favorites. I love meal prepping this for the week to add to wraps, salads, or on top of a sweet potato. I've even added it in my morning omelet topped with some avocado. It's amazing. You have to try this. 

What you need: 
Chicken Breasts I normally make about 4 to use through out the week you can also make this for a family dinner and put it in wraps or in corn tortillas. But the amount of chicken breasts depend on how much you want to make at one time or how many you are feeding. 
1 Bottle of Franks Red Hot Sauce 
Package of Ranch Seasoning 
Baking Sheet 
Foil to line the baking sheet 


Cooking Directions: 

Pre heat your oven to 350 degrees 
Line your baking sheet with foil 
Place chicken breasts on baking sheet 
Coat chicken breasts with Franks Sauce 
Place in the oven for about 15 mins or until the outside of the chicken breasts are no longer pink. 
Take out of the oven, take two forks and shred the chicken (it will still be slightly pink in the middle) 
Mix up shredded chicken in Franks Sauce and add more sauce coating all pieces
Sprinkle some of the Ranch Packet on top of the chicken 
Place back in the oven until completely cooked through about 20 more mins. 
Once completely cooked take out of the oven, let cool, and it's ready. 

You can also buy some greek yogurt, and grab the ranch greek yogurt dip mix to add on top of buffalo chicken tacos. I like to use corn tortillas and heat them with a little olive oil or coconut oil in a frying pan so they crisp up. I then do Lettuce, chicken, avocado, and greek yogurt ranch dip. 

AMAZING! Doesn't even feel like it's healthy!!
