Clean Eating Fried Rice Recipe

So this recipe is one of my absolute favorites. I mean I could literally have this meal everyday. I tend to find my best recipes when I take a bunch of stuff in the fridge and just make something with it. So I only had eggs, brown rice, and some frozen veggies so BOOM here came clean fried rice. I'm sure there is some recipe out there for this, but this is just something I threw together. I have had this for lunch the last 3 days. HA HA HA You can totally batch cook and prep this for the week to have for lunches or it's a perfect family dinner option. You can add any veggies you want or protein. Shrimp or Chicken would be perfect to add. 

Serving for One

Ingredients: 
2 Eggs
1/2 cup Frozen Carrots and Peas
1/2 cooked cup brown rice
Light soy sauce or Amino Acids
Olive Oil


Directions:

First take your 2 eggs and scramble them in the frying pan. I like to add some pepper and siratcha for taste. 

Once I am finished scrambling my eggs I take them out of the pan and put to the side. 

I whip the pan out. Pour about 1tbsp of olive oil in the pan.
Once hot I add in my frozen peas and carrots. I add in about 3 tbsp of soy sauce and sauté. 
After a few mints I pour in my cooked brown rice and sauté for another few mins. I add another tbs of sauce sauce. 

Once warm I pour in my eggs mix around, pour on my plate, and top with stratcha. 

If you want to get really fancy like me you can make it into a heart shape like they do at Benihana ha ha ha

Healthy Peanut Butter Chicken and Spaghetti Squash




This is seriously AMAZING! I mean I can't believe this is even a healthy and clean dish. Not to mention it's CARBLESS!! My mouth waters thinking about this mean and I've been on a total kick of eating it every day. The only thing is you really do have to measure out your healthy fats so you don't overdo it. PB isn't bad for you in moderation. 

TRY THIS ... It's totally something I made up but is Thai Inspired. It may sound like a weird combo but it's HEAVENLY! 


Bake a Speghetti Squash. 
High on 350 on a Baking Sheet with a little water in the bottom. Cook about 40 mins. 
Just put it in the oven whole and then take out when it is nice and soft to cut. 
Then cut in half scoop out seeds and then scoop the remainder into a dish. 

Ingredients made for ONE! 
Spaghetti Squash Cooked 
Baked Chicken Breast Chopped ( I prep this once a week so it's ready to grab and go) 
1 TBSP of PB 
1 TBSP of Coconut Oil
Squirt of Amino Acids 
Squirt of Sriracha 

Directions: 
Add the Coconut Oil to the Pan then pour in the Spaghetti Squash, Chicken, PB, Amino Acids, and Sriracha. 

Stir around in pan till warm and PB is melted and BOOM your meal is READY! It's AMAZING! I'm just saying!!

21 Day Fix Extreme Breakfast: PB and Strawberry Oats


I'm on day TWO of the 21 Day Fix Extreme ... SAY WHAT!?!? Today my daughter Brooklyn, 3 years old :) rocked out Upper Body Extreme. I LOVE that i'm able to workout from home, get a rocking body, and do these workouts with my daughter. So much fun and she totally knows how to hold me accountable. I'm loving the workouts so far. Today my arms and legs feel like JELLO but MAN I can feel the results coming in and it's getting me GIDDY! Cancun in only 60 days and that Bikini has my name written all over it.  

21 Day Fix Extreme Recipes
21 Day Fix Extreme Recipe: PB and Strawberry Oats. 


I got this breakfast recipe from the nutrition guide that comes with the program and MAN was it DELICIOUS!! Pb and Jelly Oats in ... AHHH! It tasted like a TREAT! You have to try this. Even if you aren't an oats person you will totally love this recipe because it taste creamy and sweet. This is in the rotation this week as a snack and some breakfasts. I'm loving it!! Does clean eating have to be boring and gross? Not at all, it's just about finding the right recipes! I hope you enjoy this one it's staying on my menu plan for the next few weeks for sure. 

Makes 1 Serving: 

1  Cup Water
1  Pinch Sea Salt
1/4  Cup Steel-Cut Oats
1 tsp. Smooth all-natural peanut butter, no sugar added. 
2 Tbsp Unsweetened almond milk (optional) 
1 Cup Sliced Strawberries 

1. Bring water and salt to a boil in medium saucepan over medium-high heat
Reduce heat to low. 

2. Add Oats; Cook, stirring frequently, for 15-20 mins, or until water is just absorbed. Remove form heat. Let stand for 5 mins. 

3. Add Peanut Butter, mix well. If too thick, add almond milk. 

4. Top with Strawberries. 



Containers: 
1 Purple 
1 Yellow
1 Tbsp

Exactly How to Batch Cook and Meal Prep for a Week of Clean Eating.


How to Meal Prep, Batch cooking, Clean eating


Sooo.. Did you know that Your Nutrition is 80% of where your results come from? I know there are some of you that are totally killing it in the gym. Come on, Cardio Queens where you at? I use to be one of you too! You can cardio your little heart out but if you aren't fueling that body with what it needs then you are wasting your time. You will never get the results you want! I know this because that use to be me. I never lifted weights and I would run through fast food after the gym or eat a big hearty cheesy meal. So I really want to teach you how to set your week up for success. 

This is one of the BIGGEST things that I stress and love teaching my customers about. Meal Prepping and Clean Eating. I share my meal plans weekly in my groups and really focus on this. It's a lifestyle not a DIET! That should be what your focus is. Enjoying your favorites here and there but ultimately living a healthy life that you can easily maintain. I know that we all live busy lives so this makes things so much easier. Doing it once every week or even ever two weeks is going to make your life so much easier, keep you on track, and will save you money. OKAY, did I catch your attention now? ha ha ha 

I normally reserve Sunday's for Meal Prepping and Batch cooking. 



Alright so I'm going to teach you step by step how to prepare your week. This is just what I do but you will get a really good idea on how to prep your week so it's simple to just grab and go. 

Here is what you need to go to the grocery store for: 

Several Packs of Chicken Breast 
Lean Ground Turkey
Eggs 
Bag of Fish either Salmon or Tilapia 
You could also do a bag of Frozen Shrimp

You can do Fresh Veggies or Do Frozen. 
I mix it up. 
I normally have 
Fresh Asparagus 
Fresh Brussels Sprouts
Zucchini
Spaghetti Squash
Baby Spinach
-Honestly Just depends on my menu plan for the week on which I choose- 
Then I'll always grab some frozen Green beans, Stir Fry Veggie Mix, and Peas
If you want to do an egg white omelet 
Mushrooms, Peppers, Onions or Egg Muffins.

Apples
Strawberries
Blueberries 

Brown Rice
Quinoa 
Sweet Potatoes

Coconut Oil
Mrs dash Seasonings
Cayenne Pepper
Cumin
Chili Powder
Tin Foil 

How to meal prep for clean eating

1. You want to take a large baking sheet and cover it with tin foil 
This is where you are going to grab your chicken breasts and lay them out on the pan. 
Grab your favorite salt free seasonings and season front then flip and do the other side. 

2. Pre Heat the Oven to 350 and bake for about 30-40 mins until tender. You don't want to over cook. You can use a meat thermometer if you need so you don't over cook it. You want your meat to be nice and juicy.

3. While that is cooking, You are going to grab your brown rice. There are Two Ways you can do this
If you have a rice steamer you can load that baby up according to the directions and your rice will just easily cook on it's on. You can add in some fresh herbs to the steamer and it will be delicious. If you don't have a rice steamer you can do this in a pot on the stove. Follow the directions on the bag for water to rice ratio. You want to make a pretty big batch so you have enough for the week or if you are doing two weeks for two weeks. Let the water boil and then add in your rice once boiled.

4. Remember to keep an eye on those chicken breasts, you even may have to suction out some of the juice so it doesn't overflow in to your oven. 

5. It's time to grab another big deep pan and get all of your ground turkey. Toss it into the pan and cook until browned. You can season again with any non salt seasonings. Once done drain out any grease. 

6. Last but not least you have your Sweet Potatoes. You want to scrub these and wash really well. Grab a baking sheet and throw them on and in the oven. These will take a bit of time. Probably about an hour to cook. Just keep an eye and poke holes. Once tender all the way through they will be done.

This is what our chicken and sweet potatoes will look like when they are all done. Right when you grab your sweet potatoes out of the oven slice them down the middle so they can cool down. Your rice should be finishing up too. But be sure to put your rice on at the beginning because it does take some time to cook. 

7. Once everything cools down it's time to portion it all out and bag it up so you can grab and go. 
Grab your chicken breasts and slice it all up in to bite sized peaces. Grab a cutting bored and get to town. You will have a big bowl of sliced up chicken chunks. that you can just portion out and put in baggies. I use the 21 Day Fix Menu plan in all of my challenge groups and this program comes with portion control containers. This is what I use to portion out my food. So you are going to grab your red container and just start scoop out of your chicken and ground turkey and bagging up each individual portion. That's your protein for the week. If you are doing two weeks you can freeze the other week and then thaw out at the end of week 1. 

After your sweet potatoes cool down you will scoop the filling out of the skins and use your yellow container to portion and baggy up. Grab your brown rice and portion out with your yellow container as well and baggy. These are your healthy crabs for the week. 

Veggies are in the freezer ready to just grab and you will use your green to portion that out.

Place all your baggies in plastic containers so you can just grab. I baggy all of my chicken and then put it in a container so i can just grab each one. 


This is how I stay on track when i'm traveling, visiting family, or visiting friends. You just pack your food and bring it with you. Super simple. It will change your life! 

My Favorite dish with this is to grab my chicken, sweet potato, peas, or sautéed spinach in coconut oil, and add a blue container of avocado and some hot sauce. Seriously Delish. It's great with Brown Rice too. It's like a Mexican bowl you could do a taco salad too with the ground turkey. So many ideas with it all prepped and ready to go. 



That's pretty much it! Turn up some tunes or put on your favorite movie and spend the next hour or two setting your week up for success! You got this ... You can totally do this! Your life will be CHANGED and you will feel amazing.

Clean Eating Spaghetti and Meatball Recipe - Kid Approved

Healthy, Clean, Quick Kid Approved Spaghetti Recipe


Last night I made the family Spaghetti with Turkey Meatballs and added in a little veggie twist. The girls loved it and ate up every bite. This meal was quick, simple, and healthy. 

I don't make my girls different meals than what I eat, they eat what I eat or don't eat at all. To me it's important for my girls ti know the difference between what's healthy and what's a treat. I quiz them on what foods are healthy. I am ending the trend of obesity at a young age. Of course I let them have their treats and we have pizza and ice-cream nights but that's a treat. Their health is important to me and your kids health should be important to you too. I dare you to try this recipe and see what your kids think. If they are turned off by the veggies in the sauce then blend it up. Guarantee they won't even taste them. 

Ingredients: 
100% Whole Wheat Spaghetti Noodles
2 Cans of Organic Plain Tomato Sauce 
1 Zucchini
2 Whole Carrots
1 Container of Lean Ground Turkey
Italian Seasoning 
Garlic Powder 
Pepper 
1/4 cup oats 


Directions: 

Fill a pot full of water 
Bring to a boil
Place in Noodles 
Drizzle in a little bit of Olive Oil 

Boil and cook until soft 

While the noodles are cooking
Put your Ground Turkey in a bowl 
Mix in seasonings and oats 

Make into meatballs and place in greased warm pan

Let cook for a few mins and the turn over meat balls

While the meat balls are cooking slowly chop up your zucchini into small pieces and your carrots 

Turn down heat on meatballs and pour in cans of sauce. Add in veggies. 

Toss in some more garlic powder and Italian seasonings in the sauce and cover for about 15 -20 mins on low. 

Turn off heat on noodles, drain, and serve!! 

ENJOY!

Team Beachbody Leadership Retreat!


Team Beachbody Leadership Retreat

About a month ago I had the honor of attending the Team Beachbody Leadership Retreat with the top leaders of the company. Oh and the cool thing was that I had my room completely paid for and an additional $350 travel cash. I didn't do anything special to earn this, I just did my job. Showed up daily, helped my challengers get results, and mentored my team to duplicate what I do daily. The retreat was in a BEAUTIFUL resort in Scottsdale, Arizona and I was seriously blown away with how beautiful for this place was. I was in complete shock that I was even there, with some of the BEST people in the world, with an amazing company who truly cares about giving back to their coaches. Seriously feels surreal every time I attend one of their events. They always go above and beyond. 

This event is done yearly at a different place every year for 2 Star Diamond and above and have qualified by earning a certain amount of Elite points. Being a 2 Star Diamond Coach means that you have successful sponsored 2 of your Personally Sponsored Coaches to Diamond Rank. The training is all about networking, and providing the leaders of the company with advanced training to grow our businesses, manage our time effectively, communicate with others, and expand our market. We also get pretty cool insights on new programs coming out and trainings that are provided. The retreat is 2 days packed full of seminars with top notch speakers sharing their tips on success, celebrity workouts, and mingling parties in the evenings where you get the time to get to know the other leaders in the company. If you have never been to the Fairmont Princess in Scottsdale, I highly recommend it. GORGEOUS is an understatement. 

This was the FIRST year that I qualified to attend this event and I felt so BLESSED to represent my team and show them that this is totally possible for them to do next year. If I can do this ... So can they and I'm going to show them how. 


The first night there, I was in total relaxation mode and was just trying to explore the place. It was so huge. We got their a day early so that we could have some down time. The best part was meeting up with my life long friend that I met through this amazing coaching opportunity. I seriously am so blessed to have such a beautiful friend who just gets me. We met on the Beachbody Success Club Cruise Trip in March and every since then have hit it off.

I know that this is only the tip of the iceberg for my team. I am leading this path and showing them the way to success. If I can make it to leadership they can too. I want them to know that and believe that. I'm not different than anybody. I'm a normal mom, with dishes, laundry to fold, and errands to run. I know that next year I will have at least 5 of my personally sponsored coaches with me at the Leadership Event. That's my goal and next year I will dedicate myself to helping my coaches earn this trip because I know how much it meant to me to go this year and how much it is WORTH it. 



Friday morning we woke up to a workout with Autumn Calabrese doing her new workout program that will be released in February 2015 called 21 Day Fix Extreme. It's the next step after doing the 21 Day fix program if you want to take it to the next level.

I love exactly what it stands for. They stand for integrity. They don't want to just create a bunch of products full of CRAP or that don't work but WE hold a true mission statement. To help FULFLL and improve the lives of others. To end the trend of obesity. We have wonderful values and along with that an amazing business structure. We are able to help Beachbody fulfill this mission as a coach each and everyday by running challenge groups, new coach trainings, and leadership trainings. 
Goals are created to fulfill to this mission statement. 

After our workout it was time to head in for some trainings given by the top coaches of the company and some celebrity speakers they brought in for us. We also got to hear about the new programs that will be released in the next 6 months.

After some amazing sessions through out the day, an awesome lunch that Beachbody Provided for us, and a great workout that morning, it was time to get ready for a night of mingling. It was seriously the cutest little party. They even had a Donkey set up for us to take pictures with and some amazing appetizers. They know how to make us feel loved and spoil us.

The next morning we woke up to another sunrise workout with Autumn Calabrese. She always knows how to kick our butt and make us SWEAT! Love her live workouts.

             It's always a good time with these people! We understand each other, we are the 5 % who are "WEIRD" and like to go against the flow. We follow our dreams and we know we are made for much more. When it's time to put our heads down and get to business we do what it takes but when it's time to be goofy we totally know how to do that too :)

Another awesome thing Beachbody rewarded us with was some wear and share. They came out with some new gear for every time you hit a new rank in the business and they gave us the gear for our rank in cute little gift boxes that had our names on it.

So do you want to know what I learned for this experience!?!? 

That I am never leaving this company and that I am LOYAL to them and plan on being around for a long time coming. I love everything that they stand for and love representing a company that holds a strong mission statement. A company that wants to help us succeed in our businesses and honestly believes in the products that they deliver. For the next 2 months of this year I am dedicating all of my time to not only help people get in the best shape of their life but help every single one of my coaches succeed and achiever their personal goals. I want to give all of my time to my team and my challengers!! I want to bust my butt to help others feel fulfilled. 

This whole thing isn't just bout ME it's about WE as a team!! I love Team Fit Fighters! Next year in California we will have at least 5 Team Fit Fighter coaches if not more. This is only the beginning for us. Together we have built an organization that is PASSIONATE about helping others and have built our team to #70 out of over 200,000 coaches. That means something! It happened because we put other peoples needs before our own. 

These next few months i'm putting my head down, pencil out, paper ready and creating some systems to increase my coaches growth in their business and decrease the fear and anxiety that may come with this business in the beginning. No frustration -- I got your back!!

Transformation Tuesday -- Challenger 21 Day Fix Success Stories!

Guess what!??! It's Transformation Tuesday and I have a group of challengers that just finished their first round of the 21 day fix! They pretty much blew my mind when the transformation stories and pictures started to fill the newsfeed of our closed group. AMAZING and all in only 21 days, that's only three weeks people!! I absolutely love the 21 day fix, it's one of my all time favorite programs. I think it's GENIUS and how fool proof everything is. There is a perfect mix of intensity, cardio, and strength training in the program and modifications for any fitness level. Plus you get these little portion control containers and a nutrition guide which makes it super simple to follow.

I have to say these ladies are pretty SMOKING and AMAZING!! I mean all it takes is a little hard work, dedication, commitment!! We were all in this together. We posted our sweaty pictures in our group, I shared my menu plans weekly and helped them get their menu plans together, we posted pictures, and checked in daily. It's always a good time in my challenge groups. It's all about support and accountability. The ones that got the results were the DEDICATED ones that checked in and brought it every single day!!! So proud of these ladies!!

Challenger and New Coach on Team Fit Fighters, Brittany totally crushed her first round of the 21 Day Fix in our Fit For Fall Focus Group. 10 pounds down and 6 inches. Had a few set backs but she is up and running and GIVING IT HER ALL THIS NEXT ROUND! That's really what it's all about, not perfection but the fact that you NEVER GIVE UP!! Congrats Brittany. It's amazing how much you can change when you surround yourself with uplifting people and put your mind too. I'm so PROUD of each and everyone!!! It's coming in to the holidays and I know that normally means it's time to forget about YOU and focus on everyone else!! NOPE, not this year!! Don't you want to feel confident, healthy, beautiful, and amazing in those skinny means, that holiday outfit, or that cocktail dress? I can feel you on this one, I've been there. I remember trying on every pair of jeans in the closet only going back to my yoga pants because that means I could hide the fact that nothing fit and gave me a muffin top. I totally get the struggle!! 

Sleep is something that is a luxury, your kids are running around like animals and you are doing everything you can to precent them from killing each other, you aren't ready to spend the money on a fitness program that is just going to sit and collect dust, and you really don't want to make the investment on Shakeolgoy because you aren't sure you are even going to like it.

I know the holidays are coming up and it's much harder at this time. This is the time that most of us throw this type of lifestyle out the window and wait to start in the New Year but seriously do you want to be 10 pounds heavier!??! You can use the 80/20 rule, stay on track, enjoy the treats in moderation, and loose weight. I can show you how! 80% of the time you will be eating clean and 20% of the time you get to enjoy the little extras this time of year offers you. 
Together we are going to look at your week and pick and choose what's most important, what you are going to STICK to, and where you plan to enjoy.

Requirements: 

1.  You are required to have ME as your COACH through Team Beachbody.

2.  Then together WE pick a fitness program through Team Beachbody that fits your needs. It does not matter what your ability level is, I have something for you!
{21 day fix, T25, Chalean Extreme, P90X3, Turbofire, Insanity, Piyo, ect...}

3.  You are REQUIRED to replace 1 meal a day with Shakeology ONLY for the duration of the group. Once it is over you can decide if you have enough healthy recipes in your pocket to prepare meals without needing shakeology or if you find its convenient and it takes care of 1 meal you can keep going!  I still 2 years later drink Shakeology daily.

4.  Then, it is required that you participate in the online closed group daily.  Each day I will share a tip, recipe, motivation or meal plan.  You check in, rate your day and get your inspiration for the next 24 hours.  You can log in whenever you want just as long as  I know you are there it's all good!

I am your personal support system so that you actually start, finish and truly succeed at changing your lifestyle.  I will share with you the recipes that my family loves along with the quick easy recipes that don't take a lot of prep!

How to stay to on track with your Health and Fitness goals while on Vacation!

Finally in Texas after 10 hours of traveling! 

These last three weeks I have been on total vacation mode and visited 3 different states. A lot of my challengers and friends have been asking me how I stayed on track. I'll totally admit that I wasn't 100% on track. I had more drinks than I normally would and more treats but I definitely had a little system that I used so that things wouldn't get totally out of control.

So my First stop was Texas, my hometown, to visit friends and family for about 6 days before it was time to head on to Arizona for Beachbody Leadership. 

Here was my Vacation GAME PLAN and How I stayed pretty close to on track over the three weeks. 

I packed all of my workout gear. I always make room in my suitcase for workout gear. It goes everywhere I go. It's pretty much like bringing my toothbrush with me. It's something I can't forget. 
Sports Bras, Shorts/Capris, Tank Tops, Socks, and Shoes. 
I packed my workout DVD's and made plans with friends to go running and workout. 
If you are going to a hotel you can also make sure that the hotel has a gym and everything you need before booking. This is always HUGE in my book and a must.

Instead of carrying around my bag of Shakeolgoy I ordered the packets because they travel much easier and you can just toss them in your purse and GO! I had my shaker cup with me on the plane for an easy meal and if you MUST have a blender the Mini Hamilton one is awesome to travel with. It has a detachable cup with the blender. If you only have a bag the best option is to get the baby formula containers and fill that up. That works AWESOME for carrying your Shakeolgoy around -- MESS FREE!

In my purse I stocked up with the little 100 cal packets of all natural almonds and quest bars. A lot of the places in the airport had little containers of fruit and veggies so I grabbed those in between layovers. It was PERFECT instead of resorting to the JUNK that the food service offers. Also grabbed big bottles of water to make a Shakeolgoy and drink. 

Once I got settled at my parents house for the week I had my list ready to head to the grocery store: 

I grabbed some ground turkey
Tuna
Cheese sticks
Apples
Strawberries
Greek yogurt
Baby Spinach
Balsamic Vingar
Mrs Dash Seasonings
Pinto Beans
Quinoa
100% whole grain bread
Egg Whites 
Hummus 
Baby Carrots
Turkey Bacon

Texas Grocery Shopping!! 





I made a big batch of pinto beans, ground turkey, and used 1/2 taco seasoning to make some taco meat and had that over salads for dinners and lunches. 

For snacks I had cheese sticks and nuts, Quest bars, Hummus and carrots, Egg Whites
Depends on where i'm going for the day. But I'll normally toss all of this in my cooler to take with me. Makes things super simple. 

Breakfast was Shakeology or Egg whites with Turkey Bacon and baby spinach. 

Lunch I would normally go home to have or would pack a cooler. I love things that are quick and simple while out of the home. Tuna packs are the BOMB! I mix that with greek yogurt, avocado, and sliced almonds. Then have it in a wrap, open face sandwich, or over a salad. Totally refreshing and DELISH! 

Of course while on Vacation you are going to go out to eat a lot more and that's totally okay. It's okay to splurge every once in awhile but if you have goals in mind you can still do a great job! 

Skip the bread
Ask for steamed veggies with out butter
Substitute french fries and backed potatoes for steamed veggies or a side salad. 
Dressings always on the side or sauces. 

Don't stress just try and pass on the OBVIOUS calories that you can control and move on. 

Do I have Ice cream, Alcohol, and desserts ... YOU BET I DO! I totally had some extra treats while on vacation and I didn't feel bad about it. I made sure that I got my daily workouts in and had a healthy balance. 

Pick and CHOOSE what you really want. You can't have it all .. so pick the things you most want! 
Fuel your body for ENERGY, enjoy the little things but remember you don't live to EAT you EAT to LIVE! 

Vacation Accountability
Repeat after me .... WORK OUT ... Don't skip it .. Don't make Excuses -- GET UP AND JUST DO IT! Your workout shouldn't be something you DREAD it's something that makes you feel good, puts you in a good mood, and gives you energy for the day. Remember that when your brain is telling you NO, just keep sleeping. Your day will go so much better and you will feel so much better with a good workout in! You aren't worried about loosing weight while on vacation but you want to maintain what you have already worked so hard for. Wake up and feel STRONG and know that you are an overcomer and you CAN do those things that others won't because you are WORTH IT!

Make your vacation FUN!!! Working out and Eating Clean should be a part of your life that you LOVE because of the way it makes you feel. It shouldn't be something you dread. Don't stress if you have an extra serving or have that ice-cream. Life is all about BALANCE and enjoying it! 

It's your LIFE and you don't have to eat anything that you don't want to. Ask for the food that you want, get creative with your workouts, but most of all HAVE FUN!! You only have one life might as well be in LOVE with it.
